Greasy Kebabs at Sakhawat! Mmmmm......

We had a treat taking a new friend to a must-stop-spot on the local Lucknavi kebab circuit: Sakhawat Kebab

This back of the way "restaurant" (literally it is down an alley in a residential part of town), has some AMAZING kebabs ... but all in the traditional Lucknavi style: soft ground meat (of your choice*) fried on a grittle.

Who wants some more fried fried?! You!? Well, sure, why not... I can even show you how it is made:



You'll notice several things in this video:
- The large pots holding various bits and bobs for the kebabs (meat, chopped onions, spice mixtures) and accessories like biryani (oily rice with meat)
- The kebabs are cooked on a large metal plate, fried in oil over a fire.
- That fire is charcoal fed, no need to move the meat when you're adding more fuel to the fire (that's what makes the kebabs taste so good!)
- The tandoori chicken waits like cotton candy for the next customer.

Yes it is greasy and probably not the most sanitary ... but they are so good, you (almost) don't care!

*Choice of meats in order of availability/desirability: mutton, buffalo, chicken, and fish. As killing cows is illegal in India - beef shouldn't be on the menu, but you find it at a surprising number of places nonetheless.
