Buying raw milk from urban cows in Banaras

So every morning after yoga class we walk to one of the gullies near Assi and pick up our milk from the local dhudh-walla (milk man).

It seems to be actually quite typical for a family to keep several cows and sell the milk... I know of at least three or four collections of cows around our house. The reason that we go to this place as opposed to one closer to us is that this family came highly recommended because their cows eat grains rather than garbage in the road.

The milk man ties the cow up to the wall and ties her legs and tail so she doesn't move too much while he milks her. Then he asks for our little liter milk bucket (in Allen's hand in the picture below) and then he milks the cow straight into our bucket.

It is some seriously fresh milk. We then take it home, strain it, boil it for several minutes and then it is ready to drink or use to make other milk products. So far we've made fabulously creamy yogurt and paneer. We'll hopefully be learning how to make ghee (clarified butter) this week.... and cheese once we find a source of butter milk!
